You know my M.O. when it comes to cooking: easy, colorful, healthy and delicious. These Tropical Turkey Burgers are all four.
With my Hashimoto’s and Celiac, we’ve learned so much more about food than I ever thought possible, and have had to become super picky about things being organic and what’s in our food.
Which is why I love that Foster Farms Organic Ground Turkey is raised free-range on organic land with no antibiotics, GMOs or hormones added ever. And it’s also local for those of us here in California. It’s actually the only California-grown, organic, fresh ground turkey. It’s also a lean protein that’s a lighter alternative to ground beef, which is perfect on hot summer days when you don’t feel like being weighed down.
The simple recipe is below! Oh, and here’s a tip for coring pineapples.
Use the top of a martini shaker! Ours cut the perfect-sized holes. The pineapple slices also became a perfect nest for the burgers.
Other than a little salt, pepper and EVOO, this recipe only calls for 6 ingredients: pineapple, butter leaf lettuce, cilantro, avocado, eggs, and Foster Farms Organic Ground Turkey.
It only takes 10 minutes to cook up the burgers, and in that time you can slice the pineapple and avocados and wash the lettuce and cilantro.
It really couldn’t be easier. Or more delicious!
I’ve learned that when you’re using quality ingredients and real whole foods, you don’t need to overcomplicate things. For instance, the only thing I added to the turkey for flavoring was salt and pepper. Since the meat is high quality, it doesn’t require anything extra to help bind things together or make it tasty and juicy — it just naturally is.
Try it out and let me know what you think! Served with watermelon salad (cubed watermelon with fresh basil and a little fresh lime juice on top), this was the perfect meal last night. And these would also be great for Labor Day weekend!
Here’s the recipe:
TROPICAL TURKEY BURGERS
Cook time:Â 10 minutes
Total time:Â 15 minutes
Makes: 4 burgers
INGREDIENTS
1 16 oz. package Foster Farms Organic Ground Turkey
1 tsp sea salt
1 tsp fresh ground pepper
2 TBSP extra virgin olive oil or coconut oil
1 head butter lettuce
4 eggs
1 whole pineapple
1-2 avocados
1 bunch fresh cilantro
INSTRUCTIONS
- Combine the turkey, salt and pepper in a medium bowl. Form into 4 patties. Add the olive oil to a large skillet and heat to medium. Then add the patties and cook until browned and cooked through, about 5 minutes per side.
- While burgers are cooking, rinse cilantro and butter leaf lettuce. Let dry or pat dry with paper towel.
- Slice pineapple. To core individual slices, use the top of a martini shaker as a cookie cutter to remove the center.
- Slice avocados.
- When burgers are almost done, heat another skillet to medium-high, add EVOO and fry eggs.
- Remove burgers from pan and assemble: butter lettuce leaf topped with pineapple, turkey burger, egg, avocado, fresh cilantro, butter lettuce leaf. Enjoy!
